I’m a little behind on blogging week 3 of my Whole30 journey, but I wanted to share with you how things are going so far.
Week 3 – The infamous week of the TIGER BLOOD! This is the week we all have been waiting for! The slump is over, your pants fit again, your cravings have diminished and the end is sight! You realized that you CAN do this!
Overall, I just feel awesome. In the beginning I couldn’t wait to start re-introducing some of my favorite foods (bread, cheese, beer and wine!). Now I’m honestly wondering if I ever will. I can definitely feel the lifestyle change happening that I was originally hoping for and I’m SO grateful for this experience and feeling better than I have in a long time!
I kept it pretty simple again this third week but with my usual eggs, turkey bacon, plenty of fruit a few whole30 approved Larabars, tuna and salmon with whole30 approved dill sauce (see below for the recipe). I did experiment with a few dinners like spaghetti squash and whole30 approved sauce! It was a big hit and even the kids loved it!
My favorite recipe of the week: Cucumber Dill Sauce
1/4 cup of whole30 compliant mayo
1/4 cup of coconut milk
1 tsp lemon juice
3 sprigs of fresh dill (or 1 tsp dried)
1 tsp minced garlic
1/4 diced cucumber
dash of salt and pepper to taste
Once you hit your stride in week 3, you really do start to feel amazing. Plus, this is the week where you start to notice physical changes and THAT, my friends, is super-motivating to keep going and finishing strong!
I can’t stress enough the importance of keeping things simple. Again, I cooked in batches so that I had enough to last me a 2-3 days at a time. I thought that doing it this way would get a bit boring, but trust me, it totally works and helps keep a big sink full of dishes to a minimum. Here’s to week 4!
